Cobb Salad with Lemon Avocado Dressing

I’m all about picture books these days. There’s really nothing better than being able to read to your little ones and watch them explore the pages with their hands. Such as running their tiny fingers across a meadow as if to feel the tall grass, tapping on the page of a baby elephant as if it were able to capture its attention or pulling at the cardboard page as if eager to turn to the next one. It’s such a special time my daughter and I share together. We certainly have our favorites and I can’t even tell you the excitement I feel when we read one that’s only a few simple phrases (because by bedtime I’m lucky if I can process a three word sentence).

Butternut Squash and Kale Salad with Maple Tahini Dressing

I used to find all too often I would meal plan for the week all over the board and would end up buying too much and having some of it go to waste. It’s such a sad sight having to throw away veggies and fruit that weren’t used in time. So, I started being more efficient when planning the upcoming week’s recipes by incorporating a few of the same ingredients into several meals. It not only made grocery shopping much easier but it also even allowed me to prep some of the ingredients a head of time making the actual assembling it much faster and smoother. Meal prepping is not only a time saver but it helps to keep you on track.
