Gingerbread Truffles

I should probably just accept the fact that I am not a baker. I much prefer the treats that require, well, no baking, minimal ingredients, a lot loss time and are much more forgiving as far as measuring is concerned. Yet, despite all of that I had the brilliant idea of baking three different kinds of cookies for our Christmas festivities this year. Coconut Nog Smoothie

Dear Santa,

Alas, here I am, another night before Christmas. The days always seem to blur together this time of year. It’s as though I blinked and another month came quickly to a close. All the while I’m over here with my list of holiday to-do’s as long as your naughty and nice list (unsurprisingly unfinished) and I’m simultaneously shoveling my 234th Christmas cookie into my mouth. I honestly don’t know how you do it.

Oatmeal Gingerbread Pancakes


I can’t believe that as I’m sitting here typing this entry there’s only a month and some days left of the year. Where did those 325ish days go? It also occurred to me that we are upon that time of year again when we stop and reflect on the things we are grateful for. Don’t get me wrong, we should always take a moment and reflect but as we begin to close in on the end we do have a lot more time to look back on. Not to sound cliche by being thankful for my family, friends, health, career, this blog, etc…you know all of the amazing things in my life, though I truly am.
