Blueberry Bagels

Sometimes, just SOMETIMES, I get the craving for a bagel. Okay no, that’s a bit of an understatement. I don’t think a morning goes by when I’m not craving ALL THE CARBS. Like, give me a big bowl of overnight oats, thick slices of toast covered in a perfectly ripe mashed avocado, or better even, a chewy on the inside crispy on the outside, slightly sweet, filled with the juiciest blueberries, smeared with the creamiest of cream cheeses bagel. 5 Days of Smoothies

Smoothies are definitely a staple in our house. They’re easy to make, totally customizable, can pack a heck of a nutritional punch (if made right), and delicious (duh!). Well, just like that I blinked and now here it is another Mother’s Day. I’d like to say that time doesn’t go by quickly but it really does. To think it’s already the second I’m celebrating being called “Mom” (well not actually out loud- but I know she’s thinking it) is just simply amazing. I wake up each day so in love with this beautiful, happy, smart, inspiring, funny, full of energy, and loving little girl. Being her mom is the greatest gift ever. Zucchini Overnight Oats

My first post when I began The Happy Hungry Yogi over four years ago was overnight oats. It meant something to be able to share a recipe that was both healthy and creative. The thing I loved most about it, and why I still do, is that with a simple selection of ingredients in specific portions you can create a unique and healthy version that not only tastes good but can be also be equally as beneficial.
