Honey Vanilla Greek Yogurt

Honestly just a week ago if you asked me to make Greek yogurt at home I would have laughed at you and replied with, “Who has time for that?!”

Well, here we are…me, making my own Greek yogurt. You might wonder what made me change my mind? Simply put, it’s actually SO EASY! Almost too easy.

Honey Vanilla Greek Yogurt

Gluten-free/Nut-free/Soy-free

Yields: about 5-6 cups

Prep time: 5 minutes

Total Cook/Activation time: approx. 14 1/2 hours

INGREDIENTS

  • 1/2 gallon organic milk (I used 2%)
  • 1 packet TopTherm Starter Culture
  • 2 tbsp raw organic honey
  • 2 tsp vanilla extract

INSTRUCTIONS

  1. Bring the milk to a rolling boil over high heat.
  2. Once boiling, remove the pan from the heat and allow it to cool to 114.8F (46c).
  3. Add the starter culture and whisk to combine.
  4. Pour the mixture into the yogurt maker’s inner container. Cover and let it sit at room temperature for 6-9 hours (you will notice the mixture thicken as it rests).
  5. After the time is up uncover and stir.
  6. Pour the yogurt into the strainer basket and place back into the container, cover again and place in the fridge for 6 hours.
  7. Once chilled, remove the strainer basket and spoon the Greek yogurt into a sealable jar or container.
  8. Stir in the honey and vanilla.
  9. Enjoy immediately with your favorite toppings or cover and store in the fridge until ready to consume.

Storing: yogurt will keep for up to 2 weeks if properly stored in a sealed container in the fridge.
