Coconut Nog Smoothie

Dear Santa,

Alas, here I am, another night before Christmas. The days always seem to blur together this time of year. It’s as though I blinked and another month came quickly to a close. All the while I’m over here with my list of holiday to-do’s as long as your naughty and nice list (unsurprisingly unfinished) and I’m simultaneously shoveling my 234th Christmas cookie into my mouth. I honestly don’t know how you do it.

So, being the happy hungry yogi that I am I think the only proper way to get through all of this hustle and bustle (besides yoga) is to sip, slurp or spoon this yummy Coconut Nog Smoothie I left for you. It’s packed with plant-based protein, healthy carbs and fats, full of some my favorite spices and it’s the perfect guilt-free way to enjoy a classic holiday beverage as you fill the stockings and fly your way through the night.

Coconut Nog Smoothie

  1. In a high powered blender, combine all of the ingredients and pulse until smooth.
  2. Serve with your favorite toppings as a smoothie bowl (shown with cinnamon and one of my vegan gingerbread cookies or enjoy as is with a straw! (Consistency is thicker so add a little extra coconut milk if you prefer a thinner smoothie.)
