There’s a lot to be said about change. Change occurs daily from the most minuscule moment to some major turn of event. Either way it results in one thing…growth. No matter what change occurs, whether it’s positive or negative we take away something from it. We may learn a valuable lesson, become a better person (hopefully not a worse one) and maybe even be able to continue on to a new chapter in our book of life. Each day we experience change and are able to walk away a wiser person. Each and every time we are given the chance of changing our current path we get the chance to make a choice, either change or don’t. It may seem like a complicated decision in the moment because many of us are overwhelmed by the idea of something ‘new’. We get comfortable in our daily routines and we just can’t seem to break away from our norm. It becomes work to feel like you have to uproot yourself and be replanted in what may feel like a whole new world. In our mind it’s simply terrifying. So, as a result, we often choose the latter and continue on our regular path avoiding any splits in the road at all costs.Even for me, change isn’t something I find myself welcoming with open arms. More recently my life has sprung upon me many changes which naturally came with it choices I had to make. Somewhere in me knew I needed this, rather was meant for this, to take the path less traveled and all of the risks and unknowns that come along with it. It literally put my emotional self into knots so tight I felt as though they might suffocate my ability to move forward. Though, as difficult as these new steps off course were going to be, knots and all, I had to take them. Making changes for your own well-being and stability is ultimately a reward in itself even if it isn’t clear initially as to whether it’s right or wrong. What is right is that you trust yourself to know what YOU need in this life. Have strength and courage to risk it all if it means the possibility of true peace. The steps to get to that point won’t always be easy ones but staying in the same routine isn’t necessarily either. I’ve learned by accepting change you also gain the ability to trust yourself to step outside of your comfort zone. Through this you have the ability to grow into someone who’s strong, resilient, confident and simply makes you a better you. You become one that’s so determined with your sights upon an end that even risking it all seems easy… it’s true that change has never sounded so good.

Pumpkin Pie Tarts

Makes: 4 tarts

Prep time: 15 minutes

Bake time: 30 minutes



  • 3/4 c almond flour
  • 3 tbsp coconut flour
  • 1 egg white (reserve yolk for egg wash)
  • 1/4 c coconut oil, melted


  • 1 c pumpkin puree
  • 1/2 c full fat coconut cream
  • 1 egg
  • 1/4 c unsweetened almond milk (can sub with any other non-dairy variety)
  • 1/4 c brown sugar
  • 2 tsp pumpkin pie spice
  • pinch of sea salt


  1. Preheat oven to 350F. Lightly spray or grease 4 mini tart pans and set aside.
  2. In a food processor, combine all of the crust ingredients and pulse until a dough forms.
  3. Roll the dough into a ball and then divide into 5 equal pieces.
  4. Between 2 pieces of parchment paper, roll out one of the small dough balls to about 1/4 inch in thickness. Carefully lay the flattened dough into one of the tart pans and gently press to mold it around the edges. Trim off any excess dough that may fall over the edge. Repeat for the remaining 3 pans then set aside.
  5. In a medium sized mixing bowl, combine the filling ingredients and mix until thoroughly combined.
  6. Spoon the pumpkin mixture into each tart pan and fill to the top without letting it spill over.
  7. Roll out the last remaining dough ball between the parchment and cut out shapes using a cookie cutter(s) of choice. Gently place the cut-outs over the tarts as desired. Brush the cut-outs lightly with the reserved egg yolk.
  8. Bake the tarts for about 30 minutes or until the crust is lightly golden and the filling in the center is firm.
  9. Allow to cool before serving.

Storing: tarts will keep best in the fridge for up to 5 days.
